How so? Knife sharpening is not rocket science. First you create a burr and then you remove the burr you just created. That's really all there is to it. What's a burr? The burr is composed of thousands of tiny metal wires caused by the abrasive thinning of the metal at the edge of the knife. Burr formation is unavoidable when grinding a new edge. Most home sharpeners do a good job with the grinding half of the equation and a very poor or no job at all with the second half of the process, burr removal. So what happens when the burr isn't removed properly? Your knife will be dull, not sharp, and the majority of the wire burr will end up in the foods you subsequently slice and chop. Properly executed burr removal is the absolute key to sharp, lasting and contaminate free edges. Employing SHARP PAD after using your home sharpener will turn a dull edge into one that is sharper and healthier than when your knife was brand new.
