How it Works As with all moka pots, the Caffé Porcellana/Stovetop Espresso Maker operates via the creation of pressure that forces water upwards and directly through the ground coffee, that is located within a funnel. The pressure is created by steam that is produced as the water is heated on the stove. Making the Perfect Espresso! To make the perfect coffee using the aerolatte Caffé Porcellana/Stovetop Espresso Maker, follow the steps below: 1) Pour cold water into the aluminium base to a level that is below the safety valve. Do not overfill and be absolutely certain that the safety valve isn’t covered. 2) Half-fill the funnel (to the marked level) with good-quality, fresh, medium to fine ground coffee. Do not compress the coffee within the funnel (ensure that it remains loose). Place the funnel inside the aluminium base. 3) Firmly screw the top section of the device to the aluminium base. 4) Place the porcelain pot directly underneath the spout and the Caffé Porcellana/Stovetop Espresso Maker onto the stove. 5) Heat gently until all of the coffee has passed into the porcelain pot.
