Most home sharpeners do a good job with the grinding half of the equation and a very poor or no job at all with the second half of the process, burr removal. So what happens when the burr isn't removed properly? Your knife will be dull, not sharp, and the majority of the wire burr will end up in the foods you subsequently slice and chop. Properly executed burr removal is the absolute key to sharp, lasting and contaminate free edges.
